Ebiru Brew Studio is run by Hiroshi Ebihara, and he is remarkable. He originally spent 13 years as a systems engineer at an automobile association, working on research and development for vehicle control systems.

He loves overseas travel and has been to about 25 cities. The turning point was when he was blown away by beer from a brewery called Playa in Estonia. After returning to Japan, he started going to brewpubs in Osaka constantly, and when he thought, 'I want to make beer myself too,' he directly approached a brewery called Shiklo in Osaka and trained there.

Yes, they were both craft beer lovers and traveled all over the world together. Then they opened in Sumiyoshi, Higashinada, Kobe, where they live, in April 2024. Their signature beer is an IPA called 'Peel My Lemon.' In addition to hop-derived citrus aroma, they steep actual lemon peel to emphasize its juiciness. ABV 5%.

They have a sour called 'AURA DE NADA,' and in a nod to Nada's sake brewing heritage, it uses sake yeast. ABV 5%, IBU 7. They also make 'PINE ME DRIFT,' an IPA with ABV 8% and IBU 70, inspired by the pine forests of eastern Kobe. They have a real talent for turning local memories into beer.

In a collaboration with TAOCA COFFEE, they brewed an imperial coffee stout and a coffee sour ale at the same time. They also announced the revival of the braggot 'AMURITA DEW,' and they have released a new W IPA as well. It feels like the trial-and-error mindset from his systems engineer days is alive in the brewing process.

There is a fermentation tank visible behind a single glass partition. It is a five-minute walk from Hanshin Sumiyoshi Station, and it has become such a highlight that customers even come from outside the prefecture.
