Hop BroThat’s what makes it interesting. Sakamoto uses organically grown Koshihikari rice that he cultivates himself as a secondary ingredient, and he even incorporates the steamed-rice techniques used in sake brewing to make beer. He’s applying sake-making know-how to beer to bring out the rice flavor to the fullest.

Hop BroTheir flagship, "Kingetsu," is a 5% ABV golden ale that’s clean and easy to drink, yet it has a gentle rice umami that subtly evokes sake. "Kangetsu" is a 7% beer with a strong hop bitterness and aroma.
Mugi"Kingetsu" and "Kangetsu"? So it’s a moon-name series. That fits Moon Brewery perfectly and feels stylish!
Hop BroThey also make "Yamadanishiki Saison," brewed with Hyogo-grown sake rice, Yamadanishiki. A saison made with sake rice might be unique in the world. And in spring, they also release a seasonal "Strawberry White Ale," which they even supply to cafes in Kobe.

Hop BroIt’s still a new brewery, having opened in December 2023, but the end-to-end style of growing their own rice and brewing it themselves is really strong. Their concept, "a glass that makes everyday life a little richer," is refreshingly unpretentious too.
MugiDoing everything from the rice fields to the beer glass all by yourself really makes it feel like a beer where you can see the maker’s face.
