Ebir Brew Studio, based in Higashinada Ward, Kobe, is holding a release event for its new Kölsch over the holiday weekend from July 18 to July 20. The brewery will offer the beer throughout the day, with opening hours listed as 12:00 to 23:00.

The event is titled “Kölsch × Köln - Everyday Cologne in Higashinada, Kobe.” Kölsch is a traditional beer style associated with Cologne in Germany, where it is often enjoyed in small glasses and served repeatedly as guests continue drinking and talking with food at the table.

To reflect that culture in Kobe, the brewery is introducing a Kölsch service format: staff pour the next small glass until the coaster is placed on top of the glass as a signal to stop. The event also features a collaboration with the long-established Kobe bakery Köln.

The bread-focused pairing plate centers on Kara-da Mugi Biyori, a bread developed by Köln. According to the brewery’s post, it is made with 100% domestically produced wheat and rye flour, along with several grains. The plate is served with Gouda cheese, pickles, and mustard to match the beer.

On July 18 around 6:00 p.m., Go Tsuboi, representative of Köln and the developer of Kara-da Mugi Biyori, is scheduled to visit the brewery. The event is presented as a chance to hear directly about the ideas behind the bread as well as the pairing concept.

Rather than focusing only on the beer itself, the event emphasizes how beer is served and what it is paired with. For drinkers in Kobe, it offers a clear look at how a German style can be interpreted through a local collaboration.
