Bringing Cologne culture to Kobe

ÉBIR Brew Studio, located in Sumiyoshi Higashinada-ku, Kobe, held a three-day release event for a new Kölsch together with the long-established local bakery Köln. The event, titled Kölsch × Köln, ran from July 18 to 20, and the brewery later posted a message thanking visitors for coming.

The centerpiece was Kölsch, a traditional beer closely associated with Cologne. The event adopted a Kölsch service style, where beer is served in small glasses and replaced continuously until the drinker places a coaster on top of the glass to signal they are done. That serving ritual is one of the most recognizable parts of Cologne’s beer culture.

Food pairing was also part of the concept. The brewery served a dish built around Köln’s recommended bread, Karada Mugi Biyori, giving guests a chance to experience the classic combination of beer and bread that is common in Cologne. According to the event notice, Köln representative and developer Tsuboi was also scheduled to visit on July 18, adding a direct connection to the bakery behind the collaboration.

ÉBIR Brew Studio opened on April 29, 2024 as a brewery and tap room in Kobe’s Higashinada ward. Run by a couple deeply involved in craft beer, the venue usually offers several beers on tap, including house brews. Its location in a residential part of Sumiyoshi gives the brewery a neighborhood feel, and this collaboration reflects that local, community-based approach.

Rather than treating the release as a simple product launch, the post framed it as an invitation to enjoy beer through service style, food pairing, and place. For beer fans, that combination makes the project feel more like a cultural exchange than a standard collaboration beer.
