Sankaku Beer Works is in Kawabe, Kagoshima. The brewery is inside a facility called TANOKAMI STATION, which was renovated from a closed junior high school.

A brewery in an abandoned school!? What is that? I'm way too curious!

And the brewing water is from Shimizu spring, selected as one of the Ministry of the Environment's 100 Famous Waters. It rises from a shale stratum, and it's a luxurious water that's mellow yet crisp.

Beer made with water from the 100 Famous Waters... that alone guarantees it'll be delicious.

What's more, the head brewer, Shohei Nagakawa, is amazing too. He trained at EX NOVO BREWING and Unicorn Brewing in Portland, Oregon, USA. He's someone who honed his skills in the mecca of craft beer.

A brewer back from Portland making beer in a closed school in Kagoshima... isn't that story way too strong?

And he's a proven talent, winning bronze in the Russian Imperial Stout category at the JAPAN GREAT BEER AWARDS 2019. Kenta Hayashi, who oversees the beer business, spent 16 years in the food and beverage industry in the Kanto region as a chef, and he's a pro at menu development and opening new stores.

A chef and brewer team-up! Then the food pairings should be something to look forward to.

Exactly—that's the concept. Jadd-IPA is a balanced beer with hop bitterness and malt aroma, Yadd-Golden ALE has a spicy, floral aroma, Tiida-Hazy is a juicy hefeweizen with banana notes up front, and Moze-Sour is a sour with grapefruit-like acidity.

All four have completely different personalities! And the names Jadd, Yadd, Tiida, and Moze are unique and cute!

There's also a beer made with 'Ta no Kami' rice grown by a local French farmer without fertilizers or pesticides. The name Sankaku comes from sanpoyoshi... the philosophy that makers, drinkers, and the local community should all be happy. It reaches you unpasteurized and unfiltered, with the yeast still alive.

Three-way good, so Sankaku! Rice from a French farmer and spring water from one of the 100 Famous Waters... the story behind the ingredients is amazing. It looks like there's a taproom in Kagoshima City too, so I want to go!
