A local collaboration with a food-first profile

Yonezawa Jacks Brewery in Yonezawa, Yamagata has introduced Woody Saison, a limited release made in collaboration with the well-known local shop Namikata Lamb Shop Mee-chan Shokudo. Built on a saison frame, the beer emphasizes fruity aromatics and a clean, dry finish, while adding fuller malt character and bright citrus notes from orange and lemon peel. The result is a beer designed to suit the humid stretch from the rainy season into the height of summer.

The aroma profile is shaped by juniper berry, a botanical often associated with gin, and coriander seed. That combination adds a fresh, woodsy lift and a subtle spice layer, giving the beer a clear culinary purpose rather than just a bright summer profile. According to the brewery, it pairs especially well with dishes such as jingisukan-style grilled lamb and herb-seasoned white fish. It should work both as an aperitif and as a versatile table beer.

The release note also says the same beer is being sold at Namikata Lamb Shop Mee-chan Shokudo under the name FLOCK. Woody Saison is pasteurized, while FLOCK is not heat-treated, making the pair a useful comparison for drinkers interested in how finishing methods change the final impression. The specs listed are Cascade and Citra hops, 5% ABV, 330 ml, and happoshu. As a limited item, it is being positioned as a beer worth picking up sooner rather than later.
