The Cauldron
MAHOWBREW, based in Tsuboya, Naha City, Okinawa, is introducing its American DIPA, 'The Cauldron.' MAHOWBREW obtained its liquor manufacturing license in Tsuboya, known as a center for yachimun pottery, on June 24, 2024, and is a brewery that works across a wide range of styles, including IPA and Gose. One of its defining traits is its willingness to keep its core lineup intentionally limited while releasing beers with a variety of expressions.
This 'The Cauldron' is an American DIPA with 8.0% ABV and 64 IBU. The hops used are Amarillo, Centennial, and DynaBoost Mosaic, while the malt bill combines 2-Row Pilsner, Carahell, Carapils, and Beet Sugar. The yeast is BRY-97.
The tasting notes describe it as an old-school IPA with piney, woody hop aroma up front, layered with firm bitterness and a subtle caramel flavor. It is designed to be dry and crisp on the palate, with a somewhat higher alcohol presence supporting the body, making it enjoyable before, during, or after a meal.
It is said to pair especially well with meat dishes. Since it is a DIPA with clearly defined hop character, matching it with grilled or roasted foods should make it easier to balance bitterness and toasty aromas. It stands out as a beer that brings MAHOWBREW's character to the fore, emphasizing both ingredients and style.
