A limited saison built around Yamanashi peaches

Far Yeast Brewing, based in Kosuge Village in Yamanashi, has released Far Yeast Peach White as a limited-production beer starting on August 19. The recipe uses 250 kg of fresh peaches from Peach Sennka Yamashita, a grower in Yamanashi City, with the peach variety Hikawa Hakuhō at the center of the beer’s aroma and flavor. Shipments to the brewery’s online store, liquor retailers, restaurants, and beer bars begin in stages from August 20.

The beer is brewed as a Fruits Saison, a Belgian-origin style known for expressive yeast character and a dry, drinkable finish. Far Yeast pairs saison yeast with Citra hops and locally grown Yume Kaori wheat, then carries out bottle- and can-conditioning to create a soft, fine carbonation. The beer sits at 5.0% ABV and 20 IBU, aiming for a profile that combines fresh peach aroma with a bright, easygoing finish.
