Expressing the Scent of Parakeets Through Beer

The original craft-beer brewer Sankt Gallen Brewery in Atsugi, Kanagawa Prefecture, will release "Parakeet-Flavored Beer" on April 1, 2026. The bottled product will be sold exclusively through the directly operated online shop, with orders accepted for only 24 hours on that day. At the directly operated taproom near the north exit of Hon-Atsugi Station, it will also be available on draft throughout April.

Recreating the "Parakeet Smell" with Grains and Kinako

This beer is a single release themed around the "parakeet smell," described as an aroma reminiscent of "kinako," "toasted bread," and "rice crackers." It uses millet, proso millet, foxtail millet, sorghum, oats, and kinako, with adjuncts making up 32 percent of the total. The grains are heated to soften them before being added to the malt mash, and the kinako is added in the latter half of the boil to bring out a sweet, fragrant finish.

The Usual Sankt Gallen Challenge

Sankt Gallen is the "original craft-beer shop" that had been making beer in the United States even before craft beer was legalized in Japan. It has continuously released distinctive limited-edition products such as chocolate beer and fruit beer. Since 2010, it has also continued a project timed to April Fool's Day in which it actually produces and sells "beer that sounds like a joke," and this "Parakeet-Flavored Beer" is another headline-making entry in that tradition.

For beer lovers, this is not just a novelty item; it is worth paying attention to how the aroma was built using grains and kinako. It is a project that once again highlights the freedom unique to craft beer.
