Sankt Gallen Brewery, based in Atsugi, Kanagawa, used its August 31 Instagram post to spotlight FRESH HOP IPA. The post tied into Japan’s Vegetable Day and noted that hop shoots are treated as a spring vegetable in parts of Europe, framing the beer as something almost vegetable-like.
Fresh hops, brewed fast
According to the brewery’s official information, Fresh Hop IPA is brewed with hops harvested this summer in Hokuto, Yamanashi, then moved straight from the field to the brewhouse. The first hop addition happens within 24 hours of harvest. The beer is brewed dry so the fresh hop character stands out, and it sits at 6.5% ABV.
The 2026 release date was August 26, making it one of Sankt Gallen’s seasonal late-summer offerings.
Taproom pairing
The Instagram post also notes that the brewery’s taproom is currently serving a hop genovese pizza made with the same hops. It adds that the frozen hops reserved after harvest are down to the last kilogram, underscoring how limited this year’s supply is.
As one of Atsugi’s best-known craft breweries, Sankt Gallen has built a reputation for seasonal beers that connect brewing with local harvests. Fresh Hop IPA is a clear example of that approach.
