Nagi no Ne Brewing in Kushima City, Miyazaki Prefecture, announced the brewing process for its new release, "SHIRANUI2026," on Instagram. In the post, the brewery explained that main fermentation is nearing completion, and that next week it will bottle the beer and begin the process of fermenting it again in the bottle.

In-bottle secondary fermentation is a process that gives beer carbonation by dissolving the carbon dioxide generated inside the bottle into the liquid. The post also noted that it plays a role in bringing together aromas derived from yeast, alcohol, and hops, positioning it as an important step that strongly influences the final impression of the beer.

This time, "SHIRANUI2026" is said to be based on the brewing process used for the previous release, "SETOKA," but to have a completely different world and character between early April and late May. The brewery also mentioned that ester aromas created by fermentation under high temperatures may add hints of banana and melon deep in the flavor, suggesting that the brewer is looking forward to a profile that differs from the previous release.

According to the post, reservations have already been placed by liquor retailers and customers across Japan, and the brewery also noted the possibility of an early sellout. The brewery is planning a release around June 10, though it said the timing may shift depending on how fermentation progresses. As a beer arriving from a small brewery in Kushima, Miyazaki, attention will be on how the ingredients and fermentation design come together in the finished product.
