Hazy Double IPA Born from a Fourth Collaboration

Inkhorn Brewing, which operates a brewery and taproom in Mejiro, Toshima-ku, Tokyo, has unveiled a new beer, Cornucopia, created in collaboration with West Coast Brewing. This is the fourth co-brew for both sides, and the style is Hazy Double IPA with an ABV of 8.0%.

The standout feature this time is that all six hop varieties used were freshly harvested in March 2026 at Freestyle Hops in New Zealand. Opportunities to use a significant amount of highly fresh hops, where the time from harvest to use in Japan is short, are not common, and the post also expresses gratitude for that connection.

A Design Centered on Fresh Hops

The recipe was reportedly built by incorporating elements from both breweries into the malt bill while placing top priority on the freshness and quality of the hops. The hops used are Nelson Sauvin, Riwaka, Tropical Fusion, Peacharine, Nectaron, and Southern Cross. On the Inkhorn Brewing side, the beer was designed on the assumption that nearly all of it would be used up in a 1,000-liter batch.

As for flavor, the beer is expected to deliver the green, dank character typical of New Zealand hops, along with fruit notes like ripe peach, mango, orange, and guava. The post says that compared with the brewery's usual Hazy beers, the mouthfeel and flow through the palate are different, resulting in a finish that spreads smoothly from a light layer.

Seasonal Imagery in the Name

"Cornucopia" is a word strongly associated with harvest in the Northern Hemisphere, but this time it was named with the image of celebrating the hop harvest in the Southern Hemisphere. The message also emphasizes that it should be enjoyed as soon as possible while the hops are still fresh, making it sound like a beer worth grabbing early if you spot it in cans or on draft.

Inkhorn Brewing is a craft beer brewery based in Mejiro, Tokyo. In collaborations like this one, it highlights differences in ingredient freshness and recipe design, showing a distinct expression of IPA even within the same style.
