Sankt Gallen releases "Whey Sour Ale Strawberry" with strawberry pulp
The flagship taproom of Sankt Gallen Brewery, the original local beer maker, has released a new beer, "Whey Sour Ale Strawberry," made with strawberries and whey. It highlights a sweet-tart fruit character, almost no bitterness, and pairing suggestions with cheese.
On March 12, 2026, Sankt Gallen Taproom announced on Instagram that it had begun serving its new beer, "NEW BEER" "Whey Sour Ale Strawberry."
This beer is a sour ale made with whey, a byproduct of cheese production, and plenty of strawberries. In the post, it is described as having an aroma like strawberry jam, a sweet-tart flavor, and a drinking profile with "almost no bitterness." While its texture is not as heavy as a smoothie, it is reportedly made rich enough that strawberry pulp can cling to the glass.
It is being served at the company-operated taproom. The venue is also promoting food experiences alongside the beer, including all-you-can-eat cheese for an additional fee with lunch sets, as well as all-you-can-drink and all-you-can-eat cheese options in party plans, making the new release part of a broader food-and-drink experience. Recommended pairings include Gouda and Monterey Jack, as well as the more unexpected blue cheese. The combination of strawberry sweetness and tartness with the saltiness of blue cheese is being pitched as a dessert-like pairing.
Sankt Gallen is a brewery based in Atsugi, Kanagawa, and its official website presents it as the "original local beer" maker with roots stretching back to the dawn of Japan's local beer era. True to a company that has long offered everything from award-winning standards to experimental limited releases centered on ale beer, this new product also appears to be designed around both its ingredient background (whey) and its dining context (cheese).
