Far Yeast Brewing to Limited Release "Moritomori" Rice Ale Using Hokuto City Rice Again in 2026
Far Yeast Brewing will begin limited sales of "Far Yeast Moritomori Rice Ale," made with rice from Hokuto City in Yamanashi Prefecture, on May 27. This rice ale is brewed with sake yeast, and shipments will begin in stages from May 28 through the official online store and other channels.
Far Yeast Brewing, headquartered in Kosuge Village, Yamanashi Prefecture, and operating its source brewery there, will release "Far Yeast Moritomori Rice Ale" again in 2026 as part of its "Brewed with Yamanashi" initiative, which makes use of Yamanashi's local character. Sales will begin on May 27, 2026. Shipments will start in stages from May 28 via the official online store, liquor retailers nationwide, restaurants, and beer bars.
This beer is a rice ale made with rice from Hokuto City, Yamanashi Prefecture. The name "Moritomori" reflects the idea of rice that "protects" Hokuto. This time, it uses "Nikomaru" rice from Satoshi Uematsu of Mitsuho, an initiative aimed at raising awareness of Hokuto City rice and creating opportunities for rice farmers, as well as "Koshihikari" from the Nagasaka Farm Cooperative. It is designed to connect local rice farming with beer making.
The style is Free Style Sake-Yeast Beer (Rice Ale). It is brewed with sake yeast and aims for a crossover between sake and beer while bringing out the umami of Hokuto City rice. According to Far Yeast Brewing, the fruity, sweet ginjo aroma and hop aroma harmonize with a dry flavor. Specs are 6.5% ABV, IBU 15, with Cryo Citra and Amarillo hops. It will be available in 350 ml cans and 15 L kegs.
Far Yeast Brewing has continued making beer in the Tamagawa headwaters area of Kosuge Village, Yamanashi Prefecture, and has repeatedly produced limited-batch brews centered on collaboration with local agricultural products and producers. This "Moritomori Rice Ale" also follows that line, bringing together local rice, water, and brewing expertise into a single product.
