Derailleur Brew Works, based in Nishinari, Osaka, has introduced ANONYMOUS BREWHOLIC Re:VOLUTION #003, a SAKE IPA positioned as the third batch in the series. The brewery says this release carries over the strength of the first batch and the more delicate aroma of the second, while pushing sake-making ideas as far as possible into beer.

The recipe follows a san-dan style approach: the first stage starts with rice and white koji, then wort is added in the second and third stages. The wort uses Yamada Nishiki polished to 90%, aiming for a light, clean finish with a gentle hop bitterness. The brewery also highlights a fruity, apple-like ginjo aroma derived from Kyokai No. 9 yeast.

Derailleur Brew Works is known for storytelling-driven beers rooted in Nishinari, a district closely tied to the brewery’s identity. Its lineup spans pale ales, hazy IPAs, pilsners, sour ales with yuzu peel, and even a smoked lager with hinoki chips and pink peppercorn. This new release fits squarely into that broad, narrative-minded approach.
