Fujizakura Heights Beer, based in Fujikawaguchiko, Yamanashi, will release its limited beer “Wood Barrel-Aged Sakura no Toriko Kanade” on November 6.

The beer is a barrel-aged version of “Sakura no Toriko Kanade,” the brewery’s collaboration beer with FC Fujizakura Yamanashi. It was aged slowly for six months in wooden barrels used by Sadoya, a winery in Yamanashi. The original beer uses Shonan Gold and Shine Muscat, giving it a sweet-and-sour, refreshing fruit-beer character.

After aging, the beer developed a pronounced wine-barrel aroma, which blends with the sweet fragrance of the two fruits. While a subtle fruit-derived sweetness and acidity remain, the extended maturation has softened the beer’s edges and produced a dry, slightly crisp finish. Fujizakura describes the result as having the refined fruit character and lingering finish of a somewhat dry white wine.

Fujizakura Heights Beer is known for brewing with the clear water of Mount Fuji and for emphasizing careful fermentation and maturation. This release brings together the brewery’s craft, Sadoya’s winemaking tradition, and the regional football club’s collaborative project in a single bottle.

The brewery recommends serving the beer well chilled in a wine glass. Its gentle carbonation can initially evoke sparkling wine, while the aroma and flavor gradually open as the temperature rises, offering an experience reminiscent of white or orange wine.

Suggested pairings include prosciutto and pear caprese, schnitzel, genovese pasta, and rare cheesecake. The beer is scheduled to go on sale through Rakuten Ichiba on November 6. Limited tasting sets featuring both the original Sakura no Toriko Kanade and the wood-barrel-aged version are also planned.
