Flora Fermentation in Higashiomi, Shiga Prefecture, has announced the release of its collaboration beer 'Benfinita' with Hitomi Winery. This saison uses grape pomace and is a beer that evokes the intersection of wine and beer.
Flora Fermentation is a brewery based in Higashiomi, Shiga Prefecture, that makes beer around the theme of "farming and fermentation." It has also worked with homegrown hops and rye, continuing to design beers that let the local landscape appear directly in the liquid.
This time, 'Benfinita' is a collaboration beer with Hitomi Winery, which makes natural wine in the same city of Higashiomi. The brewery's blog introduces it as a saison made with grape pomace, with the style listed as Saison w/ Grape skin. It has an alcohol content of 6.5%, an IBU of 34, and a formulation that uses Nelson Sauvin.
Benfinita is an Italian word used to celebrate the end of the grape harvest. According to Flora Fermentation's explanation, fresh pomace provided by the winery is added toward the end of the process, resulting in a finish with dryness and a moderate tannic feel. As a beer unique to Higashiomi, where winemaking and brewing cross paths at close range, it clearly expresses the company's approach to making.
