FLORA FERMENTATION in Shiga Releases Mexican Amber Lager "Constancia"
FLORA FERMENTATION in Higashiomi, Shiga Prefecture, has released the Mexican amber lager "Constancia." This beer pays tribute to the 19th-century Mexican brewery La Constancia, and features a toasty malt character and firm bitterness.
FLORA FERMENTATION, based in Higashiomi, Shiga, has released Constancia. The brewery’s name comes from “Flora,” meaning the plants and microorganisms of the region, and “Fermentation,” meaning fermentation. Founded in 2023, it began brewing at its own brewery in 2024, and is committed to making craft beer rooted in local character.
This new Constancia is a Mexican Amber Lager. It is designed with a beautiful amber color, aromatic notes reminiscent of toast and bread, and a firm bitterness layered on top. The specs are Alc. 5.0% and IBU 36. The malt bill uses Vienna Malt, Munich Malt, Aroma Malt, and Crystal Ebony, while the hops are Spalter Select, Cascade, and Styrian Wolf. Corn is also added, reflecting the character of lagers that developed uniquely in Mexico.
The name Constancia is a tribute to La Constancia, a brewery that existed in Orizaba, Mexico in the 19th century. Taking inspiration from Vienna Lager while acknowledging the background of amber lagers that developed independently in Mexico, this beer can be seen as a contemporary craft reinterpretation of that history. Rather than relying on flashy aromatics, it is a release in keeping with FLORA FERMENTATION’s aim of creating a classic beer that never gets tiring to drink.
