A Brett Saison shaped by 20 months in oak
Far Yeast Brewing has released Off Trail Farm House Ale as a limited offering from its Off Trail brand, which explores innovative approaches to brewing. The beer is a simple farmhouse ale made without fruit or spices, then aged in oak barrels for 20 months.
Classified as a Brett Saison, the beer was inspired by the compatibility of French saison yeast and Brettanomyces. Its profile brings pineapple-like tropical character together with a leather-like depth from Brettanomyces. Subtle tannins from the oak and a light acetic note add further complexity to the balance.
The beer has an alcohol content of 7.5% and is made with malt, wheat, hops, and sugar. It is available in 330ml bottles and 10L kegs. Following its limited release on October 28, shipments to the official online store, liquor retailers, restaurants, and beer bars across Japan will begin from October 29.
Far Yeast Brewing operates its source brewery in Kosuge Village, Yamanashi, an area known for its natural surroundings and a climate reminiscent of northern Europe. Off Trail Farm House Ale reflects the brewery’s interest in fermentation, microorganisms, and barrel aging.
The brewery recommends storing the beer in a cool, dark place, with refrigeration preferred. Its layered aroma, oak character, and lingering acidity make it a beer to enjoy slowly as it opens in the glass.
