Nomcraft Brewing, based in Aridagawa, Wakayama, has announced “BAK to the MAX,” its first collaboration with Osaka’s BAK Brewing. The American IPA was brewed around a simple objective: to make an intensely bitter beer.\n\nWith an IBU above 100, the beer delivers a pronounced bitterness supported by an alcohol content of 6.5% and 2.6 volumes of carbonation. The hop bill combines Simcoe, Chinook, Columbus, Nelson Sauvin, and Zappa.\n\nThe brewery describes a powerful citrus character reminiscent of grapefruit, complemented by aromas suggesting white grape and melon. Although the bitterness makes an immediate impact, the beer is designed to reveal increasingly complex hop aromas as it is enjoyed.\n\nThe malt bill includes IPA malt, Pilsner, Cara pils, and Cara munich. OG Kush terpene was also added, bringing another layer of distinctive aroma. Suggested pairings include barbecue pork belly, cheeseburgers, and yakiniku.\n\nNomcraft Brewing operates in Aridagawa, Wakayama, where it produces beers that highlight the character of hops and other ingredients. In this collaboration, the brewery and BAK Brewing put bitterness at the center of the concept, presenting a bold interpretation of the American IPA style.\n\nThe brewery has indicated that the beer is available through its online shop. For drinkers who enjoy assertive bitterness, “BAK to the MAX” offers a direct challenge at the upper end of the IPA spectrum.
