Nara Brewing, based in Nara City, has announced the first shipment locations for “MEMORY FIELD,” a collaboration beer brewed with Shiga-based FLORA FERMENTATION.
The beer is a Kölsch made with spelt wheat harvested from the fields beside FLORA FERMENTATION’s brewery, along with freshly picked rosemary grown in Shiga Prefecture. It has an ABV of 5.0% and an IBU of 13. The recipe uses Hallertau Mittelfrüh and Magnum hops, with orange peel added alongside the wheat and rosemary.
According to Nara Brewing, the rosemary contributes a fresh green character, subtle sweetness, and a cooling note reminiscent of conifer needles. These qualities are matched with the clean, bright profile of a Kölsch. Orange peel adds a citrus layer and helps connect the rosemary aroma with the flavors produced by the Kölsch yeast. Served very cold, the beer emphasizes its refreshing character; as it warms, the herbal notes become more apparent.
The collaboration grew from the relationship between Nara Brewing and Tanaka, a former Nara Brewing brewer who later founded FLORA FERMENTATION. Tanaka previously developed Nara Brewing beers including “NEW HORIZON,” made with jasmine, and “MEMORY GARDEN,” made with rosemary. The new beer continues his interest in using carefully selected ingredients to broaden a beer’s range of aromas and flavors.
The first shipments include draft and 350 ml canned beer delivered to bars, restaurants, and bottle shops in Tokyo, Kanazawa, Kuwana, Hamamatsu, Kyoto, Osaka, Nara, Fukuoka, and other cities. Availability and tap status vary by location. Nara Brewing’s online store is scheduled to begin sales at noon on October 23.
“MEMORY FIELD” can also be enjoyed alongside “Mnemosyne,” a companion collaboration released by FLORA FERMENTATION.
