And they’re not just doing IPAs. They also go bold with styles like the barley wine "IZUMO BARLEY" and the weizen "IZUMO BANANA." Because they work in small batches, being a microbrewery lets them keep trying new styles.

That’s the interesting part. They use water from the Hii River, which appears in the Kojiki as the setting of the Yamata no Orochi legend. Their hops come from the U.S., New Zealand, the Czech Republic, and Germany, while the malt is from the U.K. and Germany. So they’re brewing with ingredients from around the world and water from mythology.

They also use local Izumo ingredients like citrus, persimmons, and figs as adjuncts, folding the region’s bounty into the beer. Their directly operated stand near Izumo City Station has 12 taps in total, with 8 original beers and 4 guest beers, and they also have a location in Goei Yokocho in front of Izumo Taisha Shrine.
