The craft brewery Himitsu Beer in Ise City, Mie Prefecture, introduced a new IPA made with its homegrown grapefruit, "Gyugyutto Grefru IPA," on Instagram.

In the post, the brewery explained that the grapefruits it had been growing through the winter had finally reached harvest time, and that it brewed the beer generously using the first harvested fruit. It used about 50 fruits. The fruit was added to the brew with the peel made into a paste and the flesh turned into juice, layering it over the base IPA to aim for a fruit-forward flavor. The style is IPA, and the ABV is 6%.

For hops, it mainly uses well-conditioned Galaxy, combining grapefruit-derived citrus character with tropical hop aromatics. The post explained that the bitterness that can be easy to notice when grapefruit juice is tasted on its own becomes a beer that offers both drinkability and bitterness, which is interesting. It is a composition that puts the fruit aroma front and center while still retaining the outline of an IPA.

Himitsu Beer is a brewery that continues to make beer by connecting agriculture and brewing from Ise, Mie. Its stance of turning crops grown in the fields directly into beer is also a strength unique to a local brewery. This post also clearly reflects that characteristic.

It also revealed plans to grow coriander this summer and eat salad, and it consistently shows a perspective that connects the blessings of the fields to everyday meals.
