Yamanashi Prefecture’s Hokuto-based Manchin Brewing has released a new beer, SUN SONG. It is a pale ale with an ABV of 5.0% and an IBU of 25. Featuring a combination of green chili peppers and summer mikan, it has a distinctly summery profile.

For this batch, in addition to Korean green chili peppers, the brewery used pesticide-free summer mikan delivered by AMBESSA&CO. According to Manchin Brewing, using summer mikan harvested later in the season, with its richer sweetness, helped balance the beer’s spiciness. One of its defining traits is that, beyond the bright fruit character, it leaves a clear chili sensation on the finish.
