Himitsu Beer Introduces the IPA "SECRET HOUSE," Co-Brewed with U.S. Little House Brewing
Himitsu Beer, based in Ise City, Mie Prefecture, unveiled on Instagram the New England-style IPA "SECRET HOUSE," brewed with Little House Brewing in Connecticut, USA. It is a beer that layers both brewers' strengths, from hop selection to the use of oats.
Himitsu Beer, based in Ise City, Mie Prefecture, introduced its new IPA "SECRET HOUSE," co-brewed with Little House Brewing, a brewery on the U.S. East Coast, on Instagram. In the post, company representative Keita Yabuki explained that it is a true-to-style New England IPA made together with his American friend Sam.
This beer is a collaboration that takes inspiration from the brewing style of Connecticut, where Little House Brewing is located, while adding Himitsu Beer’s own interpretation. It uses Citra, Simcoe, and Motueka hops, and the brewery said it used cryo hops, which concentrate aromatic compounds, for the entire hop bill. It also challenged itself by directly adding oat powder to the kettle in order to make the beer even juicier on the palate.
The post highlights aromas reminiscent of mango, orange, and lush peach, along with a silky texture derived from the oats. While the beer was finished with a soft, pillowy mouthfeel all the way to the foam, the process, including the label design, seems to have involved plenty of trial and error.
Himitsu Beer is a microbrewery founded in Futami-cho, Ise City, Mie Prefecture. While valuing its distance from local ingredients and agriculture, it continues to make beer that brings out the character of yeast and raw materials. This "SECRET HOUSE" is also one to watch as a beer shaped through discussions with an overseas brewery while maintaining that approach.
