Inkhorn Brewing introduces Aether, a 5th-anniversary Hazy Double IPA
Inkhorn Brewing in Mejiro, Tokyo has introduced Aether, one of its 5th-anniversary beers. The beer is a Hazy Double IPA at 8.5% ABV, built around Nelson Sauvin and Riwaka with fruit-forward aroma and a firm, sharpening bitterness.
Inkhorn Brewing, based in Mejiro, Toshima-ku, Tokyo, has introduced "Aether" as one of its beers for the brewery's 5th anniversary. The brewery operates a tasting room in Mejiro and has built its reputation on balancing everyday releases with more experimental anniversary beers.
Aether is a Hazy Double IPA brewed at 8.5% ABV. The grist includes Extra Pils, oats, wheat, and Carapils, while the hop bill features Nelson Sauvin, Citra, Mosaic Cryo, Nelson Sauvin Cryo, and Riwaka Kief. Inkhorn House Yeast is used for fermentation.
According to the brewery's notes, the beer leans into pineapple, orange, yellow peach, and mango-like fruit character, with dank aromatics from Nelson Sauvin and Riwaka. The beer is described as having a soft body, but also a sharp bitterness that keeps the finish in check, so the beer does not feel as heavy as its style might suggest.
The name "Aether" refers to the fifth element in ancient Greek thought. Inkhorn frames anniversary beers as a way to push its brewing in a new direction rather than simply summing up the past year, and that approach is reflected in this release as well.
