Forest Brewing in Kawasaki Town, Miyagi Prefecture, will release its limited-batch "SHIJUKARA - Shijukara -" on April 6. Built on a Belgian White base, it has been finished as a white beer using yuzu and sansho.

What sets it apart is the way it layers the soft drinkability typical of Belgian-origin white beers with citrus aroma and the gentle tingle of sansho. In an Instagram post, the brewery explained that, instead of orange peel, it used the thick peel of "Rain-Praying Yuzu," a specialty from Shibata Town, Miyagi Prefecture. By making use of the aroma in the peel, the beer appears to be designed to deliver a flavor that also pairs naturally with Japanese cuisine.

Forest Brewing is a brewery that brews with water from the Northern Zao watershed and wood-fired heat, and its official website also promotes a commitment to "brewing the orthodox way." Because this is a brewery that has built its identity less on flashy presentation and more on the combination of local ingredients and traditional styles, this SHIJUKARA is likely to be seen as a limited release that clearly reflects that direction.

Suggested pairings included French fries, paella, stir-fried bacon and asparagus, seared bonito, and tempura of spring vegetables. It seems easy to match with everything from fried foods and seasonal vegetables to aromatic fish dishes, making it highly versatile at the table.
