Nomcraft Brewing has introduced its new Mexican lager, Con Safos. The beer comes from a connection with Los Elegantes, a taco-focused pop-up that has worked with Nomcraft’s Juso taproom multiple times, and it is presented as a Nomcraft-style take on a classic Mexican lager using blue heirloom corn.

The recipe is built on North Star pils, Pilsner, flaked corn, Vienna malt, and caramel Munich I, with Motueka and Zappa hops adding a subtle citrus accent. The tasting notes point to biscuit malt, crispness, and corn character. At 4.5% ABV and 25 IBU, it is set up as a low-bitterness lager with a clean, easy finish.

Nomcraft Brewing is based in Aridagawa Town, Wakayama Prefecture, where it operates from a renovated former nursery school. The brewery has long framed its work as part of a broader "craft beer for town-making" effort, alongside nearby food and community spaces. In that context, Con Safos fits neatly into Nomcraft’s approach: a beer made with food pairing in mind and shaped by local relationships.

For pairing, tacos, burritos, nachos, and quesadillas are the natural matches. It is not a loud, hop-forward release; instead, it aims for balance, drinkability, and a style that supports the meal rather than overwhelming it.
