Nomcraft Brewing Releases Recipe-Swap IPA with Our Brewing
Wakayama-based Nomcraft Brewing has announced Dandy Crocodile, an American IPA made in collaboration with Fukui’s Our Brewing. The project saw both breweries exchange signature recipes and brew each other’s beers at their own facilities.
A collaboration built around exchanged “king” recipes
Nomcraft Brewing’s latest release is Dandy Crocodile, an American IPA created with Our Brewing of Fukui. The two breweries exchanged their signature “king” recipes: Our Brewing’s Dino King and Nomcraft Brewing’s Octopus King. Each brewery then brewed the other’s recipe at its own facility.
From online meetings through brew day, the teams shared the brewing philosophies that guide their work. The collaboration was designed not simply as a recipe swap, but as an opportunity to combine different perspectives, brewing environments, and techniques.
Tropical hop character with a soft malt profile
Dandy Crocodile is listed at 7% ABV and 42 IBU, with medium bitterness and 2.7 volumes of CO2. Its tasting notes highlight passion fruit, berry, melon, and citrus, while the malt character provides a gentle balance beneath the expressive hop aromas.
The malt bill includes Pilsener, Vienna, Munich, and Caramunich 3. Motueka, Cascade, Mosaic, and Strata hops are paired with a West Coast Ale yeast. Suggested food pairings include hot dogs, yaki onigiri, and beef jerky.
Nomcraft Brewing operates in Aridagawa, Wakayama, after renovating a former nursery school as part of its effort to build a community through craft beer.
