Its latest release, `uncountable Pale Ale #2`, reflects that approach clearly: a pale ale built around the brewery's own hop variety, `uncountable`, with all hops sourced from Tono. Sales began at 3:00 p.m. on August 5 through the brewery's online shop and its wholesale sales channel.
According to GOOD HOPS, uncountable has a gentle, sweet aroma reminiscent of layered fruits. For this release, the recipe from the original `uncountable Pale Ale` was revised so the hop's character would come through more strongly, and the brewery used it in greater volume. The hop blend also includes `Alpha Aroma` as an accent, `IBUKI` to round out the balance, and `Saaz` to add structure to the aroma.
The beer is described as offering a fresh, sweet-and-tart aroma and flavor. What stands out most is how the brewery uses only Tono-grown hops to express one of its own newly developed varieties.
