Inkhorn Brewing, based in Mejiro in Tokyo's Toshima Ward, has introduced a new West Coast Pale Ale called Kestrel #5. The beer comes in at 6.0% ABV and is built around Citra, Mosaic, and Simcoe, with a profile centered on bright citrus and a dry finish.

Aroma and Flavor


For this batch, the brewery says it pushed the Citra character a little more strongly, bringing out grapefruit and a touch of lychee. Mosaic and Simcoe add berry-like notes, a hint of berry leaf, and a resinous edge, giving the aroma more depth. The result keeps the hop presence associated with recent West Coast-style IPAs, but in a package that is lighter and drier.

Style Choice


Inkhorn notes that the color and balance might lead some breweries to call this an Extra Pale Ale. Still, because many drinkers no longer picture a red- or brown-tinged beer when they hear "pale ale," the brewery chose the more specific name West Coast Pale Ale to better reflect the beer's character. Bitterness is lower than in an IPA, making the beer easier to keep drinking. A slight chill haze remains, which also fits the warmer, more humid season ahead.
