The brewery operates from a renovated former elementary school near the Kushiro Marsh. On its official site, Brasserie Knot says it offers five core beers plus a wide range of seasonal releases, with the goal of creating beers that fit different seasons, meals, and occasions.
NoMaps is a collaboration beer tied to the Sapporo-based urban festival of the same name. According to the post, the NoMaps project chooses its beer style each year based on the event theme. Last year’s theme, LOSS LESS FUTURE, inspired a West Coast IPA made with newer ingredients and brewing methods.
This year’s theme is Galapagos. Brasserie Knot says it shaped the beer into a Wheat Lager using a special lager yeast and newly developed hops. The beer is scheduled to begin shipping on September 23, making it one of the brewery’s notable seasonal releases heading into autumn.
