Nomcraft Brewing is a brewery based in Aridagawa Town, Arida District, Wakayama Prefecture. Operating out of a facility renovated from a former nursery school, it is also involved in community building centered on craft beer. The team includes members with experience in the United States, the United Kingdom, Germany, and elsewhere, and they produce a wide range of beers, from hop-forward styles to classic beers.

The beer introduced on Instagram this time is “Special Delivery,” a collaboration with APE Brewing. The post reveals that Nomcraft’s brewer, Mr. Matsumoto from APE Brewing, had a connection dating back eight years, when he was working at Minoh Beer and made deliveries within Osaka City. It also notes that the collaboration finally came together after many years.

The beer style is Sour IPA. A small amount of grape sansho is added during fermentation, and Riwaka and Motueka are used for dry hopping. Kiyomi, a Japanese citrus, is also added, layering in a soft aroma reminiscent of citrus and lily of the valley. Rather than being the kind of beer that pushes hard with intense sourness, the finished beer is described as a delicate design with orange juice-like nuances and just a hint of sansho.

In terms of specs, it has an ABV of 6.0% and an IBU of 26.5. In the post and sales information, flavor impressions are also expressed with terms such as “orange,” “citrus,” “lilac,” and “bubblegum.” It seems to be a beer in which Nomcraft’s distinctive use of local ingredients and its relationship with APE Brewing directly shaped its character.
