Yorocco Beer releases four barrel saisons made with Beau Paysage grape pomace
Kamakura-based Yorocco Beer Iwase Brewery is releasing four bottle-conditioned barrel saisons made with grape pomace from winery Beau Paysage. The lineup includes three Pinot Noir versions and one Chardonnay version, with limited online sales starting at 10 a.m. on August 29.
Kamakura-based Yorocco Beer Iwase Brewery has announced a special bottle release made in collaboration with winery Beau Paysage. The project has been in progress for three years, and the new beers use grape pomace from the winery’s vineyards as part of a barrel saison program.
This release consists of four bottles made with grapes harvested in autumn 2025: `Pinot Noir #40`, `Pinot Noir #57`, `Pinot Noir Unlabeled (Yorocco house barrel)`, and `Chardonnay (Yorocco house barrel)`. The #40 and #57 batches were matured in oak barrels that had previously been used for wine aging at Beau Paysage.
The process is layered. Yorocco first aged the saison in barrel, then soaked it with grape pomace delivered in the fall, and finally completed bottle conditioning after packaging. The result is a beer where saison character, wild yeast activity, grape-derived flavors, and the history embedded in the wood all coexist in one bottle.
All four beers come in 375ml bottles. The three Pinot Noir versions were produced at about one barrel each, for a total run of roughly 500 bottles per batch. Chardonnay is available in larger numbers, while the Pinot releases are much more limited. The beers have already been shipped to many shops, and Yorocco’s online store will sell a small quantity starting at 10 a.m. on August 29.
The release fits Yorocco’s local, quietly crafted approach: not flashy, but built on fruit, wood, yeast, and time. It is a distinctive collaboration that sits between wine and beer without losing either side’s character.
