Brasserie Knot, a brewery based in Tsurui Village, Hokkaido, has introduced SOUL, a Rice IPA built around locally sourced ingredients.
Presented with the phrase “Add rice, and SOUL is born,” the beer is brewed with Hokkaido malt, Hokkaido-grown rice, and hops from Kamifurano. The brewery positions it as a beer made entirely from ingredients grown in Hokkaido, expressing the character of the region through its recipe.
SOUL is listed as an IPA with an ABV of 6.5% and an IBU of 65. Soft malt richness provides the foundation, while the rice contributes a light, transparent drinkability. Kamifurano hops bring a refreshing aroma reminiscent of grapefruit, with a clean finish designed to highlight the citrus character directly.
Rice can add a delicate body and a crisp impression to beer. In SOUL, that sense of clarity is intended to develop gradually as the beer is enjoyed, balancing the hop aroma and bitterness with a more restrained, refreshing texture. Its combination of citrus-forward hops and a clean palate also suggests versatility with food.
Brasserie Knot brews in Tsurui Village, next to the Kushiro Wetland in eastern Hokkaido. The brewery renovated the former Moyukuri Elementary School into its brewing facility, preserving the building while creating a place where visitors can learn about the brewing process and buy beer. Its beers are made with an emphasis on harmony with people, culture, and nature.
Alongside five core beers, Brasserie Knot produces seasonal releases suited to different seasons, meals, and occasions. With its focus on Hokkaido-grown rice, malt, and hops, SOUL offers a clear expression of the brewery’s regional approach.
