Nomcraft Brewing announces Mosaic-led West Coast IPA 'Wonder - Mosaic'
Nomcraft Brewing, based in Aridagawa Town, Wakayama, has introduced the second beer in its Wonder series: a Mosaic-focused West Coast IPA called Wonder - Mosaic. Built at 7.0% ABV and 65 IBUs, it aims for a balance of dank character and layered fruit.
Nomcraft Brewing, which operates from a renovated former nursery school in Aridagawa Town, Wakayama, has released the second entry in its Wonder series.
`Wonder - Mosaic` is a West Coast IPA brewed at 7.0% ABV and 65 IBUs, with 2.7 volumes of CO2. The grist uses North star pils, Pilsner, and Cara pils, while Mosaic and Columbus provide the hop profile and West Coast Ale is used for fermentation. According to the brewery, the Wonder series is designed to focus on a single hop and draw out its character in a direct way.
For this release, Mosaic takes center stage. Nomcraft describes the hop as delivering dank notes alongside ripe mango, dark berry, and a forest-like depth. The tasting note lists dank, ripe mango, dark berry, and "inside the woods," while the suggested food pairings include pulled pork, lamb skewers, and blue cheese. The result is a dry, firmly bitter IPA that should land well with hop-forward beer drinkers.
