Himitsu Beer releases the noble-hop IPA “KAWAUSO Kiyari”
Himitsu Beer in Ise City, Mie Prefecture, released a 6% IPA called “KAWAUSO Kiyari,” loaded with noble hops, right after finishing its early-morning seed-sowing work. It is the brewery’s first beer to incorporate wet hops, and it is designed to pair easily with Japanese food.

The post introduced how the family had been sowing rice seeds from 5:30 a.m. in the morning, and how their 1-year-old and 7-year-old children helped set up the seedling trays. For now, the seed-sowing has finished safely, and the next major milestone will be rice planting around Golden Week.
Also announced was KAWAUSO Kiyari. The style is NOBLE IPA, with an ABV of 6%. It uses plenty of traditional European noble hops, and this time it also incorporates wet hops for the first time. The post explains that the beer’s golden appearance is layered with aromas reminiscent of freshly picked wild herbs and tea leaves, earthy notes like a forest after rain, and lemon and citrus-like aromas.
The flavor is characterized by a clean, unadulterated bitterness and a dry finish. It has a refreshing aftertaste typical of noble hops, and even though it is an IPA, it also has the drinkability of a lager. Pairings suggested include spring mountain vegetable tempura, Japanese-style tempura, pork shabu-shabu, and carpaccio of white fish, making it a beer designed to be enjoyed with food.
This beer brings to life a concept the brewery had been developing for about two years. It was also introduced in the context of energizing Ise’s Okihiki, making it a release that connects the local seasonal mood with the brewery’s everyday life.
