Nomcraft Brewing, based in Aridagawa, Wakayama, operates from a renovated former nursery school and continues to focus on hop-forward beers. Its latest release is 'Sir Danks a lot', a Hazy IPA brewed by Mark, the German-born master brewer who has worked in breweries in Germany, the UK, and the US. For a brewer who says he usually prefers classic styles, the decision to make a hazy beer gives the release extra character.

The beer comes in at 7.0% ABV, 30 IBU, and 2.6 volumes of CO2. The grist includes Pilsner, IPA malt, wheat malt, malted oats, golden naked oats, and black wheat, while the hop bill combines Simcoe, Chinook, Columbus, and Riwaka with New England Ale yeast. Nomcraft describes the beer as low in bitterness, with a dense dank character and a tropical aroma. Tasting notes list pineapple, mango cream, and passionfruit.

Suggested pairings are fried chicken, tropical pizza, and mackerel cutlet. In Mark's brewer's note, the beer is framed as a hop-centered Hazy IPA brewed for Cherry Bomb's anniversary in Osaka. The result is a release that keeps Nomcraft's drinkability intact while putting hop expression front and center.
