Himitsu Beer, based in Ise City, Mie Prefecture, has unveiled a new batch of "KAWAUSO Enyaa." The style is farmhouse ale with peach and thyme, and the alcohol content is 5.5%. Centered on peach, this farmhouse ale is paired with homegrown thyme.

This batch switches away from the previous peach-and-lemongrass recipe and was brewed with thyme from the fields, which has come alive with spring growth. The post explains that thyme was used for aroma during the boil, and peach was also added during brewing. The finished beer puts peach aroma firmly in front, while herbal, spicy, and yeast-derived nuances layer together.

As for the flavor, it is described as having a sticky, soft mouthfeel, with peach flavor present, yet surprisingly dry on the numbers. Bitterness is restrained and easy to drink, and the faint bitterness on the finish neatly cuts the sweetness, resulting in a light, easygoing drink. As the temperature rises, the aroma and flavor expand, so you can enjoy it from the first chill through the change in temperature.

As a craft brewery rooted in Ise, Himitsu Beer is known as a maker that stays close to the region's seasonal feel and daily life. In this post too, while mentioning the Oki-hiki ritual at Ise Grand Shrine, it positioned the beer as suitable for everyday hydration, after work, and refreshment after sports.
