Nomcraft Brewing has introduced Triskelion 2026, its regular three-way collaboration with Hino Brewing in Shiga and Open Air Brewing in Hyogo. This year’s version is a West Coast IPA brewed with wine yeast, and the project now follows a new format in which the host brewery rotates.

Based in Aridagawa, Wakayama, Nomcraft Brewing was built by renovating a former nursery school. The brewery has long framed its work around the idea of building the town through craft beer, and collaborations like Triskelion reflect that community-minded approach.

The beer comes in at 6.5% ABV and 60 IBU. The grist includes North star pils and Spitz, while the hop bill features Cryo Krush, Mega Terps, Southern Cross, and Strata. On the yeast side, Nomcraft combines California yeast with wine yeast. The result is described as a bright, aromatic beer centered on grape and passion fruit, with refreshing lime and watermelon character. The wine yeast adds depth, while the West Coast IPA structure keeps the finish dry and firm.

Food pairing suggestions include summer vegetable and chicken tomato stew, quattro formaggi, and cheese. As a collaboration, Triskelion 2026 carries both the continuity of a long-running relationship and a new recipe-making approach for this year.
