A summer-ready guava IPA

Manchin Brewing in Hokuto, Yamanashi has introduced STAY CHILLED..., a collaboration Session Guava IPA. The beer comes in at 4.5% ABV and 40 IBU, aiming for easy drinking while keeping the aroma vivid. In the brewery's own post, guava and IPA are described as a strong fruit-beer match, and this release leans into that idea for the hottest part of the season.

The recipe uses mash hopping to soften the bitterness and build a cleaner, juicier hop character. The hop bill includes Hallertauer Hersbrucker, Columbus, Centennial and Nelson Sauvin on the hot side, with Nelson Sauvin, Amarillo and Idaho 7 on the cold side. Guava puree was also added.

The collaboration partner is gallery_honyarara, the gallery inside neighboring gasbon. Illustrator Michio Nakao created three label designs, so the project extends beyond flavor into visual identity.

Manchin Brewing is part of MANGOSTEEN HOKUTO, a DIY-renovated former factory in Akeno, Hokuto City. The site combines the brewery, a bottle shop and taproom, and a beer-focused canteen, all set against views of the Southern Alps and Yatsugatake. A release party is planned for August 9 at MANGOSTEEN HOKUTO, along with a one-day cookie pop-up.
