Choshi Beer, a craft brewery based in Choshi, Chiba, is drawing attention alongside Choshimaru’s new restaurant concept, Sushi Yasuke Shiosai.

Sushi Yasuke Shiosai opened on September 17, 2026, on the fourth floor of JIYUGAOKA MUSE SQUARE in Jiyugaoka, Tokyo. The restaurant is built around the idea of enjoying sushi that is comfortable for both the body and the planet. Its menu incorporates sustainably minded ingredients, including farmed fish raised with brown-sugar feed and Tasmanian salmon, while skilled sushi chefs prepare the dishes in an Edo-style setting.

The restaurant also highlights Chiba through ingredients such as Takomai rice from Tako Town and seafood connected to the region. Choshimaru’s new concept is therefore not only an expansion into a new style of dining, but also a way to communicate the company’s Chiba roots in a Tokyo neighborhood.

That regional identity pairs naturally with Choshi Beer. The brewery produces beers inspired by the seafood culture of Choshi, including Choshi Ale, known for its amber color, fragrant malt character, and crisp finish. Such a profile can work well with sushi, grilled dishes, and fried items: the beer adds aroma and gentle bitterness while refreshing the palate between bites.

Sushi Yasuke Shiosai offers counter seating where guests can watch the chefs work, as well as seating suited to families and groups. An opening promotion for a five-piece honmaguro assortment is scheduled to run from September 17 through October 31, 2026.

The combination of Choshi’s seafood heritage, Choshimaru’s new sushi format, and local craft beer offers a fresh way to experience the flavors of Chiba in Jiyugaoka. More information about Choshi Beer is available on its official website.
