Kamigata Beer is the first brewery in Japan to renovate a public bath into a brewery.

It was renovated from the former site of a bathhouse called Miyuki Onsen in Higashiyodogawa Ward. The brewing tanks are lined up in the former men's bath, the sauna room is now the malt-crushing room, and the women's changing room is now the taproom. The bathtubs, faucets, and lockers are still there, so the atmosphere is amazing.

And it actually makes sense, too. Beer brewing produces 15 to 20 times as much wastewater as the final output, and the drainage system of a bathhouse fit that perfectly. The representative, Koji Shikata, originally ran standing bars in Kobe and Osaka, and he started brewing himself because he felt there were far too few beer options that pair well with meals.

So he came from the restaurant side of the business. That perspective of beer that goes well with food feels really authentic.

He trained for a year at Beer Lab Kyoto before opening in 2019, and even the beer names are full of his love for bathhouses. The bestselling "Kinkan no Yu" is a fruit beer made with plenty of Osaka-grown kumquats. Others include "Nobose Stout," "Yugari IPA," "Bandai Ale," and "Yuzame Ale"... they are all bath-themed names.

They even serve the beer in milk bottles. It's inspired by the milk people drink after leaving a bathhouse. They also work to reduce food waste by partnering with local farmers, using off-grade tomatoes and buntan pomelos in beers like "Tomato no Yu" and "Buntan no Yu."
