What kind of brewery is Hakodate Yunokawa Brewery?

There’s a brewpub called Endeavour in Hakodate’s Yunokawa Onsen area, and it’s really interesting. They converted a building that used to be a woodworking shop warehouse into a brewery.

Yeah. It’s a super small 200-liter system, and it’s brewed by head brewer Shimoida. They use 100% spring water from Otobe Town for the brewing water, and they’re also working on cultivating local two-row barley.

Their regular lineup includes Weizen, Pale Ale, and Red Ale, but the tap lineup changes all the time, which is part of the appeal. They’ve also made things like Sansho Saison, Basil Saison with holy basil, and a grape IPA with a white-grape aroma.

Everything is unfiltered, and they deliver the beer with the ale yeast still alive. Because it’s a 200-liter system, they can do a lot of experimental beers. They’ve also made a single-hop IPA using only Idaho 7 hops.

What’s more, they collaborated with Yukawa Koshisushi, a long-established local sushi restaurant founded in 1964, to serve temari sushi paired with craft beer. A sushi shop and a brewery teaming up in a hot spring town is pretty rare.
