Himitsu Beer, based in Ise, Mie, has announced “VS,” a collaboration beer made for the second anniversary of VS, a Shibuya restaurant known for wine and soba.\n\nThe beer takes inspiration from the restaurant’s seasonal signature dish, “Sudachi Fig.” In addition to sudachi and figs, the brew uses buckwheat groats, as well as the dashi and kaeshi actually used at the restaurant. Rather than simply pairing beer with the dish, Himitsu Beer recreated its ingredient profile in liquid form.\n\nThe result is intended to bring together the citrusy freshness of sudachi, the fruit character of fig, the distinctive nuance of buckwheat, and the savory depth of dashi and kaeshi. The project reflects Himitsu Beer’s approach in Ise: exploring local ingredients and unexpected connections between food and brewing.\n\nThe anniversary project also includes a commemorative long-sleeve T-shirt. Its chest design features an embroidered sudachi fox and fig tanuki, while the back carries the VS logo associated with Virtus and Suba. Visitors can experience the collaboration through the beer, the restaurant’s soba, and the anniversary events held at VS.
