Uchoten Jozo, a brewery based in Suwa, Nagano, has announced an event featuring its “Zwickel Pour,” starting September 19. While finished beer is normally transferred into 10–20-liter stainless-steel kegs, refrigerated, and served from taps, this project will pour beer directly from the maturation tank.\n\n## What is a Zwickel Pour?\n\n“Zwickel” refers to a tap or sampling faucet in German brewing terminology. Uchoten Jozo uses the term “Zwickel Pour” because the beer is drawn from the sampling faucet attached to the tank. Serving the beer before it is transferred to kegs offers drinkers a closer look at the beer as it exists in the brewhouse.\n\nThe beer selected for the event is a Kellerbier brewed in August with torne in Osaka and WYTHE TOKYO in Tokyo. Uchoten Jozo explains that Kellerbier’s character is shaped not only by a defined beer style or specification, but also by the way it is served.\n\n## A brewpub experience\n\nThe brewery chose direct tank service as the best way to express the character of this Kellerbier. It also plans to serve the beer directly from the tank several times as “Keller Day” events before the beer is ultimately kegged. Guests may therefore be able to experience the beer’s fresh character as well as the gradual development brought by lagering.\n\nBased in Suwa, Uchoten Jozo is using its brewery and brewpub setting to present a form of service that differs from standard tap pouring.
