A new collaboration from Uchoten Brewing

Uchoten Brewing, based in Suwa, Nagano, has introduced “U.N.K.U.T / Kellerbier...” on Instagram. The post identifies the beer as a collaboration brew and names kellerbier as its style.

Kellerbier, meaning “cellar beer” in German, is a lager traditionally served with little or no filtration. By retaining yeast and other fermentation components, the style can offer a soft haze, rounded texture, gentle malt character, and subtle yeast-driven aromas. It provides a more direct expression of the brewing process than highly polished, brilliantly clear lagers.

The name “U.N.K.U.T” suggests a beer focused on freshness and natural texture rather than clarity. At the time of the post, details including the collaboration partner, ingredients, alcohol content, release timing, and serving locations had not been announced.

A diverse brewing approach from Suwa

Uchoten Brewing began brewing in 2024 in Suwa, Nagano. The brewery has worked across a range of styles, including Belgian-inspired beers, lagers, and farmhouse ales, and also operates a taproom near Kamisuwa Station.

Collaboration beers offer an opportunity to combine different techniques and ideas in a single batch. With “U.N.K.U.T / Kellerbier...,” the central question is how Uchoten Brewing has interpreted the traditional cellar-lager style. Further official details will reveal how the beer expresses its yeast character, carbonation, malt profile, and finish.
