Hideji Beer Mukabaki Brewery has released a new addition to its limited series, "This Month's Cellar Release": a Japanese black tea Doppelbock called "Kind but Strong."

The key adjunct in this release is Japanese black tea from "Mukabaki Mountain Calm Farm," a tea grower at the foot of Mt. Mukabaki, where the brewery is located. According to the official information, the brewery combined hot-water extraction and cold-water extraction to fine-tune the balance between aroma and umami. The result brings the tea character forward while keeping the flavor rounded and free of sharp edges.

The beer style is Doppelbock. A rich lager with monastic origins, often called "liquid bread," it is a style that lets you fully enjoy malt sweetness and depth. Although this beer has an alcohol content of 8.5%, its mouthfeel is soft, with malt aroma and Japanese black tea notes layering together. It appears to have been designed as a beer to slowly savor in the colder months.
