Craft Bank unveils new Kyoto Mizuo yuzu-scented "YUZU BRUT"
Kyoto craft brewery Craft Bank has unveiled a new lager, "YUZU BRUT," made with the peel of ripe yuzu. It was released on February 12, 2026. It is introduced as a beer brewed with a white-koji fermentation design that lifts the citrus aroma while finishing as dry as possible.
Overview of the New Release
"YUZU BRUT," published on Craft Bank's official blog, is a limited-edition beer built around the BRUT LAGER style. The concept is a sharp, crisp drinkability that lets you enjoy the aroma of ripe yuzu from Mizuo, Kyoto, in a direct way.
According to the brewery, Mizuo yuzu is a material they have traditionally used in COLD IPA. This time, they changed direction and leaned into a drier design with a clearer profile.
Brewing Points
In the recipe, white koji from the long-established Kyoto maker Hishiroku is used during fermentation. By thoroughly breaking down sugars, the beer aims for a dry finish characteristic of a BRUT. In addition, Hallertau Blanc, Nelson Sauvin, and Motueka hops add aromas reminiscent of white grapes and lime, creating a layered composition alongside the citrus character from the yuzu.
The official description highlights a pale-gold appearance, a rich yuzu aroma, and a sharp drinking finish driven by strong carbonation. Chilling it before drinking allows you to enjoy even the lingering aroma as it passes through the nose.
