A one-barrel release


Toriidou Jozo, based in Kanuma, Tochigi, introduced a new beer called Ashita ni Kakeru Hashi. Service starts on June 5, and the batch is limited to one barrel, or roughly 50 servings. The brewery will be closed from June 2 to 4, so timing matters for anyone hoping to try it.

How it was made


According to the brewery’s note, the beer was designed to push beyond the usual boundaries of beer. Instead of standard beer yeast, it was fermented with wine yeast. A small amount of honey was used to add a gentle sweetness in aroma, and oak chips previously used for whiskey maturation were added during fermentation for aging.

Flavor profile


The beer is described as combining a fruity, dry aroma from the wine yeast, a rich body from the oak, subtle vanilla notes, and a honey-toast-like finish. Its alcohol content is about 7%, but the goal was not just strength; it was to create a glass where different drink styles seem to meet at once, like an orchestra.

A personal beer


The name comes from Simon & Garfunkel’s song of the same title, but this beer was also brewed as a highly personal piece for someone’s celebration. From a small brewery in Kanuma, it arrives as a limited release that clearly reflects the brewer’s intent.
